We all need balance in our life and Ixlama delivers it in spades. It’s medium bodied and juicy-sweet, with notes of peach, plum, and brown sugar rounding off the cup. While this Guat is an everyday drinker, it still has a lot of flair like Ric Flair. So remember, “to be the man you’ve got to beat the man – wooo!”

Guat season has arrived and my man Danner hooked us up with a doozy. Ixlama creeps into your mouth and slaps five to every one of its new buds – taste buds that is. Dad jokes aside, this coffee from Huehuetenango is a slurper. It’s super balanced with notes of peach, plum, caramel, and brown sugar for days. This is one of those coffees you can brew in your tight pants and beard or send along to your weird uncle Pat in Ohio with his house full of cowboy paintings – yeehaw!
I like to brew this sucker with the Kalita to highlight the wonderfully broad flavor spectrum the Ixlama displays in the cup. Toss 25gs into the brewer and pour 400gs of water over the top. Take your time to draw the brew out to around 3:30 and take a pic for Instagram or whatever the kids are into these days.
Huehuetenango Ixlama comes from specially selected small producers, Finca El Paternal & Finca Nueva Palmira, from the highlands of San Pedro Necta and La Libertad, both located in the state of Huehuetenango, Guatemala. This shade grown coffee is harvested and brought to the mill where it is sun dried on a patio and placed in “guardiolas”. It is separated by color via computer and density/size mechanically which results in a superior clean bright cup.
